An Array of Piadas About to Roll Out at the Pizza Cave
If you haven’t tried a Piada, you’ve been missing out. The Pizza Cave on 290 West is about to change that with the introduction of its own take on this Italian classic.
A piada is classic Italian artisanal flatbread usually filled with cheeses, vegetables, cold cuts, and other meats. It’s essentially a street food served from small stands or kiosks in both large and small Italian cities.
It’s also known as a piadina in Italy where the thinness or thickness may vary by the region if its origin, particularly in the Romagnola area. Many people eschew the fillings however in deference to the taste of the flatbread itself.
I look forward to sampling the Pizza Cave’s take on the piada. They also have a Philly Cheesteak version in the works.
