Bill Dumas on His Turf by The Smokers at The Switch in Belterra Village
Bill Dumas is a tested BBQ veteran griller and smoker who is taking care of business at The Switch, a partnership between the Stiles Switch BBQ and Lenoir brain trusts that recently opened in Belterra Village near Dripping Springs.
Shane Stiles and Todd Duplechan of Lenoir are friends and also partners in the revival of J.T. Youngblood’s. So with Todd’s influence in the picture I was not surprised to see dishes on the menu like Smoked Chicken Piquant or a Sausage and Crawfish Pot Pie.
And the barbecue that brought notoriety to Stiles Switch is still prominent on The Switch menu.
With noted Pitmaster Dumas in the House as well, things appear to be lining up for what should be a very interesting restaurant.
