Ciclo Rolls out Intriguing Menu at the Four Seasons

I have been waiting for my recent Saturday night’s dinner at Ciclo since I first learned about the new endeavor that has replaced Trio at the Four Seasons.

Richard Sandoval has teamed with exec chef Elmar Prambs and chef de cuisine James Flowers to create a Latin-accented menu. The food thus far is creative, beautifully nuanced, and delicious.

Consider the amazing short rib accompanied by a stunning tomatillo sauce. The tenderness of this dish is exceeded only by the beautiful and savory flavors. I was literally blown away by this offering.

Equally compelling was the Seared Lamb Chops that came with a serving of Parker Bread that was just about perfect. A side of wonderfully creamy Yukon mashers was the perfect complement.

The menu consists of a number of appetizers designed for sharing and the Lobster empanadas were at the top of the list. The grilled avocado garnished with Harissa was another Latin-accented treat.

And then came a moment that sealed the evening for me. I happened to glance up at the far wall and noticed a charcoal drawing of Sergio Leone bad guy Lee Van Cleef (The Good, the Bad and the Ugly). Since all his faux westerns were actually filmed in Spain, the picture just made perfect sense and helped me get a glimpse into Sandoval’s thought process.

And I do need one more glimpse of a menu that will only become undoubtedly more creative.

So stay tuned, foodies. Ciclo means cycle in Spanish and it’s perfect name for its location in a hotel that has routinely celebrated the cycles of the seasons. We’ll be headed back soon for a second tasting. I sincerely hope that you are all soon able to do the same. There is nothing I enjoy more than availing myself of the output of creative culinary minds.

As much as I lament the passing of Trio, Ciclo will put its imprimatur on one of Austin’s finest hotels.
