David Bull Opens “Congress” at the Austonian

One of my favorite chefs is back in Austin at the Austonian. David Bull opened Congress on New Year’s eve at the Austonian on Congress Ave. at 2nd.

The fine-dining restaurant will be vintage Bull and he has assembled a great staff to go along with his inestimable talents including Jason Stude as Sous Chef. Bull also has rejoined his former mentor at the Driskill, Jeff Trigger, as Trigger’s La Corsha Restaurant Partners is the managing force behind Congress as well as the partner restaurant, 2nd Bar and Kitchen.

Bull cut his spurs ten years ago when he revitalized the sagging fortunes of the Driskill Grill. Within a year of his arrival, the Driskill had moved into our Top 20 on Dining Out with Rob Balon.com. Things were so bad when Bull arrived that the Driskill had resorted to doing “Mystery Dinners,” a sure-fire sign of a restaurant’s eminent demise.

But his stunning and innovative cuisine had an immediate impact on the fine-dining crowd in Austin and I fully expect that Congress will have the same kind of impact on the downtown Austin dining scene.
