Silver and Stone Sizzles in Georgetown
Silver and Stone in Georgetown is the work of one extremely creative chef, James Ramsey. His restaurant’s name suggests class and elegance and that’s exactly what the discerning diner gets there. It’s located on the 4th floor of a nice building at 501 S. Austin avenue across from the Monument Café.
The Roasted Duck Flatbread leads off a delightful array of appetizers. This is Ramsey at his best. The lovely duck is adorned with Machego and Swiss cheeses, Sopresetta and an amazing creamy roasted pepper tomato sauce. Diverse elements to be sure, but they all work together. This dish gets “must taste” status. The Honey Lime Marinated Grilled Shrimp are also a delight. The marinade provides a fresh, riveting taste and the polenta fries and the leek and sweet onion slaw complement perfectly.
The Tomato Mozzarella salad is not to be overlooked either. Ramsey’s take on the classic Caprese with fresh Buffalo Mozzarella cheese and an achingly tasty Balsamic vinaigrette is hard to turn down.
Ramsey’s entrees lean toward the palate of the gastronomic carnivore. And what’s wrong with that? The flash Grilled Venison medallions are superb. There is no gamy flavor whatsoever: just impeccable taste and tenderness. The Pan Roasted Filet of Beef is another show stopper. Crusted with Tellicherry pepper (from India) and fresh herbs and done with a truffled fig and port sauce, Ramsey coaxes extraordinary flavors out of this dish. I actually dropped my fork in utter amazement after the first bite.
The Steak Frites is a nicely marbled and grilled Rib Eye topped with a sauce of roasted shallots and scallions. Served, of course, with crispy pencil fries, this dish is a steal at $29.
And who but a chef with a serious pedigree would revive an old favorite like Coquille St. Jaques. Ramsey had added shrimp and whitefish to this traditional scallop and Mornay sauce preparation. And we absolutely loved the flavors here.
The wine list is ambitious but reasonable and features over 180 selections. And the desserts are mouth watering. If you have to try this restaurant, trust me, you are missing out. silverstonerestaurant.com
