When Not in the Mood for a Ribeye, the Flat Iron Steak at III Forks Works Just Fine
Chef Adrian at III Forks makes an amazing ribeye. But he also has a deft tough with the classic Flat Iron steak to which I occasionally defer.
The Flat Iron, which uses the grainier meat of the shoulder, is tasty and much more tender than when lesser chefs prepare it. It’s also known as a “butler steak” in the U.K.
It’s really worth a try at III Forks!! Oh, and do try their terrific mashers.
